This is an excellent book for anyone starting their careerin the catering industry. My brother had this book at catering college. I started reading itin bed to get to sleep. I was instantly hooked,
i am currently working as a chef & have been for the last 7 years. I'm so glad i picked this book up when i did.

This book is great because it gives step by step instructions for every dish. A great plus is that it's obvious all the recipes have been tried out (many cookery books are merely copied from others). This book is used to teach cookeryin colleges so anyone should be able to follow it. I borrowed a copy from the head Chef at the four star Polurrian Hotelin Cornwall, where it's used for preparing those set meals servedin hotels.
